Protein French Toast

As a kid I loved french toast but it's been many years since I actually made some so I decided to come up with a healthier version that I could enjoy with no guilt.

Ingredients: (one serving)

  • 4 eggs
  • 1/4 cup of vanilla almond milk
  • 3 slices of Ezekiel bread
  • 1 scoop of whey/casein protein - I always use Quest 
  • 1 teaspoon of cinnamon
  • Walden Farms sugar-free syrup (chocolate, caramel or maple)

Instructions:

  • Mix the eggs, almond milk and cinnamon into a bowl.
  • Pour egg mixture into a large glass baking pan
  • Soak ezekiel bread in egg mixture for 4 minutes on both sides
  • Place egg-soaked ezekiel bread onto a non-strick griddle at 250 degrees
  • Cook for approximately 4 minutes on both sides or until done
  • Remove french toast from griddle
  • In a bowl mix your favorite Walden Farms syrup with one scoop of protein powder
  • Place one large spoonful of syrup/protein topping between pieces of french toast
